Some mornings, when waking up, all you can think of are pancakes.
Which is what happened to me.
I did these pancakes this morning and they turned out to be so delicious I cannot even begin to describe. Let’s just say that I made another batch for lunch as well. I enjoyed them with blueberries, slices of banana, maple syrup and cinnamon. A squeeze of lemon or lime juice to freshen them up a little, and voilà, Saturday’s Happy Pancakes are ready to be eaten!
Saturday’s Happy Pancakes
1 cup of self-rising flour
1/3 cup of sugar
1 1/3 cup of buttermilk
a pinch of salt
a touch of cinnamon
a squeeze of lemon juice
Mix the dry ingredients and then the egg and buttermilk in a separate bowl. Whisk the egg-buttermilk mixture into the dry ingredients and squeeze just a tiny bit of lemon juice to lift up the cinnamon flavour. Heat frying pan to medium with a little bit of oil. Pour a dollop of batter on the pan and fry till the surface of the pancake starts to bubble. Flip, fry the other side and voilà, it’s done!
